
I made the boys tacos and had a taco salad for me. The salad was lettuce, black beans, corn, avocado, salsa, and olives. I wish I had some tomatoes. Boys had black beans, corn, a little cheese, and black olives in the taco with avocado on the side.
When people find out my family eats healthy, vegetarian food they always ask "What do you eat for dinner?". My answer is always "Uhh....hmmm....". I can never remember! I created this blog to track what I make for dinner to help other people (and me) think of healthy meals for dinner.
Looks yummy! Ok, so here's a similar one (although more of a summer thing)-Marley and I would eat this for lunch or a quick snack: Black beans, corn, scallions, a few spoonfuls of organic jarred salsa and fresh lime juice mixed together as kinda of a summer bean salad served with fresh guacamole on toasted wheat pita bread cut into fun shapes.
