Apple Pizza

Today I put apples on everything! They are so sweet they liven up everything. Tonight we made veggie pizza with apples and butternut squash soup with kale and apples. Yum!

Stuffed peppers

Veggie stuffed peppers that even my meat eating Dad gave a thumbs up to! Peppers stuffed with stewed tomatoes, onions, brown rice, baby bok choy and broccoli. Delish!

Super Food Pesto!


This pesto recipe was so good and made from healthy ingredients that it is forcing me out of my blog retirement. I usually get so much basil from my weekly farm share I don't know what to do with it. The recipe was so easy! We had it for dinner one night over pasta and veggies and then ate it as a dip with baby carrots.

We all had it different ways...I had the pesto with some pasta and lots of veggies, Ant had pesto on just veggies with a side of beets, the kids had pesto pasta with some veggies. Yum!

Perfect Pesto
Marian Fanok

Serves: 6
Preparation Time: 15 minutes

Ingredients:
2/3 cup almonds
2/3 cup pine nuts
1 cup fresh basil leaves
2/3 cup fresh parsley or cilantro leaves
3 garlic cloves
2 teaspoons Bragg Liquid Aminos
2 tablespoons lemon juice
1/2 cup chopped tomato

Instructions:
Grind almonds and pine nuts finely. Pack basil and parsley tightly into measuring cup. Place in a blender or food processor with the remaining ingredients. Blend well & combine with nut mixture.

Use as a dip for fresh cut veggies, or a topping for baked potatoes.
May also be served with baked tortilla triangles. Cut whole wheat tortillas into small triangles and heat until crisp at a low temperature (200 degrees) for 1 hour 15 minutes.

No Guilt Ice Cream!


Take a look at the "ice cream" Anthony made last week. Okay, it's not really ice cream (did you see my quotes?), but this stuff is sooo good! We used to eat a lot of Ben and Jerry's in my house, but this stuff is sooo much better for you and won't add on the extra pounds. It really satisfies my after dinner sweet craving and it is made of just fruit!


To make the ice cream, we start out by taking a bunch of really ripe bananas (the more ripe the better), break each banana into about three pieces and freeze a whole bunch in a ziploc bag. When they are frozen we put them in our high power juicer along with other frozen fruit depending on what flavor we are making. (Thanks to Matt at the Rainbow Garden for the idea to use the juicer!) We used to use our high power blender, but the juicer makes it much lighter and fluffier.

You can concoct any flavor you want, but this time we made strawberry (just frozen strawberries and frozen bananas), cinnamon raisin (frozen bananas with cinnamon and raisins mixed in), and my favorite chocolate (frozen bananas and unsweetened cocoa). Yum!! I might need to make some tonight....

Anyway, this is a great thing to make for dessert if you are having trouble breaking that dessert habit at night!

New Year's Resolutions

How do you stick to your New Year's resolution to eat healthier? Jam pack your fridge with healthy food so you always have something on hand and are never hungry!

Homemade Sushi Dinner!

I got this great little sushi kit at the Basil Bandwagon last night. Anthony rolled up these fabulous rolls and Evan inhaled them. Next time I will have to pick up some fish at the fish store too, but this was a last minute thing so we just stuck to veggies. We had beat & avocado roll, avocado & mango roll, beat & sweat potato roll and a sweet potato & avocado roll. Yum! Next time we will make it healthier and get the kit with brown rice....

Oh and I almost forgot, the favorite was the dessert sushi of banana & avocado! Gone too fast for a pic!
